Sweet Potato Pancakes
I had this for breakfast this morning(along with fruit). I love these pancakes; they’re the perfect combination of complex carbs, protein and fats to refuel after an amazing workout and topped with all natural almond butter these will make your taste buds sing.
You will need:
1 small sweet potato,
2 organic free range eggs or 4 egg whites
1 tablespoon of coconut flour  (you can sub this with any flour of your choice or even protein powder)
Ground cinnamon and ground vanilla to taste
A little bit of water
Optional: stevia for extra sweetness
Prepare the sweet potato as you usually would (I like to steam or bake mine), then mash it up with a fork, add the remaining ingredients, mix well and cook in a non-stick pan with a little coconut oil on medium heat. Top with your topping of choice (highly recommend all natural almond butter) and enjoy. Have a lovely and healthy day guys.

I want to try Crossfit.

I’m such a chicken. I feel like I’ll suck at it.

There’s a Crossfit gym super close to my house. They’re offering a beginner’s intro package of three classes for $20.

Seems crazy to not a least give it a try.

Gotta get out of my comfort zone and whatnot.

Paleo Granola Bars

It’s pretty hard to find sweet snacks while on Paleo, so this granola bar recipe is such an amazing discovery. These are for SURE going to disappear pretty quickly, and your kitchen will smell AMAZING. They taste just like other granola bars, but healthier and you can take them on-the-go :)

Ingredients:

  • 3/4 cup of raw pumpkin seeds
  • 3/4 cup of raw sunflower seeds
  • 1 1/2 cups of almond meal
  • 1 1/2 cups of shredded unsweetened coconut
  • 3 cups of raw slivered, chopped, or sliced almonds
  • 3-4 tsp of pumpkin pie spice
  • 1 cup of raw honey
  • 3 tbsp of pure vanilla
  • 3/4 cup of melted coconut oil

Instructions:

  1. Preheat oven to 325 degrees
  2. Mix all the dry ingredients in a large bowl
  3. Stir in the wet ingredients
  4. Pour the mixture into a baking pan that is lined with foil or parchment paper
  5. Spread the granola flat throughout the sheet
  6. Bake for 15 minutes and stir the mixture
  7. Bake for another 5 minutes
  8. Let cool and cut into granola bars

I had an awesome Mother’s Day.

I got to pee in peace and I took the longest shower ever. I was able to take a nap without being demanded to do all of the things by my three year old.

Mike made naps happen without my help. One of the best parts of the day!

I did, however, indulge at brunch yesterday. Was delicious. No regrets. Getting back on track today.
